Whole30 Day 20

Today I took a mini road trip with my mom, grandma & youngest daughter to Columbus, Ohio for the day. It was two hours in each direction and a bit more time in the car commuting from store to store. I didn't take any pictures of food today because I didn't cook anything for myself. My day consisted of eating turkey, ham, guacamole and Larabars in the car.
Definitely missed having my fresh foods throughout the day. Tomorrow is a new day.

Whole30 Day 19

I find myself feeling a bit unmotivated today. Just feeling a bit bored with my meals. The biggest example of this is that I tried to eat tomato soup and it tasted all wrong. Too sweet really. I got one or two bites in an gave up.
Anyway, here is what I ate today. 

Day 19
Breakfast: Skipped. 
Lunch: Chicken Sausage & Fruit
Dinner: Poppy seed fruit salad & 2 Larabars

Whole30 Day 18

Day 18 went well. I am finding myself getting a little bored with my menu. I've been eating the same foods for the past 18 days. I need to find some variety. Something that won't cost a bunch of money, but will be a little different.
Any suggestions?
Anyway, here is my food today.

Day 18 Breakfast: Bacon & Eggs Lunch: Potato, Sautéed Veg & Chicken Sausage  Dinner: Chicken & Zucchini/Sweet Potato Fries

Whole 30 Days 16 & 17

Really didn't have the time to blog both days 16 and 17 so I'm doing them together. They were both good days. 
I did find myself missing desserts and bread a little bit more strongly than I did last week. My resolve however is very strong and I feel very diligent in staying the course of eating healthy. 
I have started having underlying concerns about when I am done with this whole 30 reset and going on vacation. 
How crazy am I going to go with food? 
Will I completely undo everything I did doing this Whole 30? Will I really want to restart Whole 30 on June 1st? All these questions will be answered when I approach those moments I guess, but I am a little worried. 
Without further Ado here's what I ate on day 16 and 17.

Whole30 Day 15

I feel great. My skin is clearer. I have been sleeping more soundly and my digestive issues are gone! Cutting dairy has been amazing! 
I know that making Paleo permanent is HUGE! I really do believe that I will love the results.
Ok. Enough chit chat. Time for todays menu.

Whole30 Day 14

I am at 21 days until the end of my 1st Whole30 reset! It will finish up the day before Elena's birthday. Which of course means cake!! 

Haha. It'll be fun. 
I'll go on vacation the last week of May and when I get back I'll start another Whole30 reset on June 1st I will do that for 3 weeks before going on yet another vacation the last week in June.

 After that I'll do a third Whole30 reset and then start officially being Paleo full time.
I'm really enjoying thinking of Whole30 as my "reset button".

Honestly, the only thing I think I will miss is the fact that I'm not allowed to eat potatoes with paleo. I love sweet potatoes.

 I don't eat them often, but it's one of those things that is filling and feels indulgent when I am not able to have anything fried or breaded. Then again. With paleo I can't bread my own chicken using coconut or almond flour so maybe I shouldn't complain.
Anyway, on to business. Here is what I ate on day 14.


Whole30 Day 13

Today was great. We went to Bob Evans for breakfast after talking our recycling out. 
I was about to order a compliant meal that was very tasty!
In the afternoon I took the girls to a birthday party. They had a great time.

I was proud of myself for how I ate too. 
Breakfast: Steak, Eggs, Hashbrowns & Fruit
Lunch: Chicken Sausage w Mustard/Aoli & a Halo
Snack: Fruit
Dinner: Coconut Chia Pudding topped with Dried Blueberries & Cranberries with Walnut/Pecan Pieces

Whole30 Day 12

I enjoyed my day. I really felt like this process is feeling much more natural. All except for the sudden and very strong desire to get on the scale. 
Ugh. I am NOT supposed to weigh in at all during Whole30. I wish I wasn't feeling so curious about the scale. It's not where I want my mind going. 
Anyway, I just realized that my pictures of food are not on my phone. Ugh. I deleted them. Oh goodness. *facepalm*

Breakfast: Coconut Chia Pudding
Lunch: Sautéed Mushroom & Chicken Sausage lettuce wraps. 
Dinner: Baked Potato Fries w Aoli and a Chicken Sausage

Whole30 Day 11

Today was very good. Healthy eating has become a solid part of my daily routine. I don't struggle with how I am eating outside of one teensy problem. 
I am getting tired of eggs. 
Yup. I have been looking for recipes. Any ideas? Breakfasts are hard to navigate on Whole 30 while being egg free.

Here is my food today. Dinner isn't pictured. I was at a fundraiser dinner and they discouraged phones.

Breakfast: Uncured Bacon, Sausage & Eggs :(
Snack: Larabar & LaCroix
Dinner: 2 small chicken breasts & green beans.

Whole30 Day 10

Struggling a bit with boredom.
I am getting sick of eggs. I still have more than 3 weeks in this cycle if Whole30. 
Ugh.... any ideas gor eggless breakfasts?
Here is what I ate today.

Breakfast:  Eggs, Bacon, Halos & Uncured Bacon
Lunch: Sautéed Veggies & Sweet potato 
Snack: Larabar. 

Whole 30 Day 9

I am feeling so good. The days are getting easier. Food is a tough thing to control sometimes.

My menu today.

Breakfast: Sausage & Eggs
Lunch: Sautéed Veggies & Baked Potato
Snack: Larabar & Banana
Dinner: Chicken Sausages & Halos

Whole30 Day 8

Day 8 went very smoothly. I decided that I will be extending Whole30 another week. I will be on it till May 17th. I really like it THAT much! My oldests 9th birthday is May 18th and then we have vacation. I will be sure to start my round 2 of this when we get back. I am considering doing a Whole60. 60 days would be great! I do think that Paleo eating will become permanent for me. Anyway, let's get to my food yesterday. 
Breakfast: Egg muffins, 1/2 an avocado, sausage, banana & 1 Halo.
Lunch: Griund turkey & yellow squash. 1/2 an avocado.
Made myself so chocolate ice cream. Cocoa, banana, avocado & coconut milk.
Dinner: Turkey, spicy guac 
Dinner Pt. 2 My dessert. 
It was a great day.

Whole30 Day 7

Today went well. I gave up coffee today. Just didn't have it in me to drink it black.

Breakfast was at church. Sundays = I don't make breakfast. 
Lunch was leftover chicken thighs, fresh fruit & veg.
Dinner: Turkey burgers wrapped on lettuce.

Tried these for the 1st time. Really yummy. Not sweet at all though.
Yep. Day 7 was good.

Whole30 Day 6

Day 6 was good. The beginning of it was really frustrating because I was in the middle of breakfast preparation when I had to leave the house. I never got to have any breakfast until getting in the car and eating too Larabars. It wasn't what I had initially planned, but the rest of the day was just fine. 
I think the reason why I got so cranky about not being able to eat breakfast was that I planned it. I usually get derailed in my health plans when I make exceptions for the meals that I plan making. This time I proved that I was able to stay controlled. 
I'm pretty happy with how Whole30 has gone. This is just a 6, but I'm loving it. I haven't had coffee in a couple of days which is sad because I like it so much. Oh well. Luckily I don't need it to stay awake and I definitely don't have the headaches or anything, but I do miss the leisurely enjoyment of a cup of coffee in the evening.

Whole30 Day 5

I have speant this day eating & eating. Good grief. My appetite is outta control!
I eould explain everything, but I am so tired. 

Whole30 Day 4

It seems that one of the skills that I am developing and exercising during Whole30 is portion control and not eating on impulse. Today my portions were much more conscious. Yesterdays breakfast/brunch was way too much for 1 serving. Today I cut that in half and was still satisfied. I also didn't impulse eat. It was great!
Here are my meals for today.
 Breakfast:  Egg in Ham cups. Slice of Chorizo on top.
Lunch:  Chicken Sausage. potato frittata, carrots, grapes, pjneapple.
Dinner: Baked Chicken Thigh, Zoodles, Mashed Cauliflower & Potato

Whole 30 Day 3

Today went pretty well. The only struggle I am experiencing is that I cannot seem to find a way to drink coffee where I can enjoy it. I am in International Delights Sweet Cream girl and now that I can't have it in my coffee I opt for a splash of almond milk. Honestly, it just tastes so gross. I'm not enjoying it at all and it's awful. I don't usually drink more than a couple cups of coffee each day, but they're such comfort to it and I'm missing it!! Anyway, other than that, all is well. Here are my meals for today.
Breakfast: Eggs in Turkey Bacon Cups & Guac
Lunch: Ceviche This afternoon I ate lunch with Jonathan, our pastor and a few the church staff. It was a good time. It was also a great way to test if I could figure out whether or not I can eat out of the house and keep it Whole30. The ceviche was delicious. Although, they probably could have scaled back a bit on the jalapeno peppers. OUCH!

Whole 30 Day 2

I've been having a great time so far with Whole30. It definitely takes more work in the kitchen as everything I have been eating a lot of  fresh foods, but so far it's been very gratifying. Here are my meals for the day.

Breakfast: 2 egg & veggie muffins, Potato & Onion Fritatta, Julienned Turkey Bacon w Peppers and Guac
Lunch: Chicken Sausage, Halo & Cashews
Dinner: Hashbrowns, Eggs & Turkey Bacon.

My snacks were Halos & Apples.

It was  great day!

Why Whole 30? Day 1

A couple of days ago my friend Morgan sent me a message asking me if I wanted to join her on her next Whole30. Jonathan and I had actually just started Phase 1 of South Beach Diet which was only going to last two weeks, but I had been interested in Whole30 in the past and really wanted to give it some thought. After some consideration and a couple of conversations with Jonathan about whether or not we wanted to continue SB Phase1, I decided I would rather do Whole30.
Let me just break down Whole30 for you. Essentially it's 30 days of eating nothing that is processed. Everything is completely clean.
 You don't have; dairy, beans, alcohol, sugar of ANY kind, grains, or peanuts. 
I know. Peanuts. It seems like a weird one, but I'm not questioning it. I don't really care for peanuts as much so it's not really a big issue for me. Let's just say that it would be a deal-breaker for Jonathan. He is a die-hard peanut butter man. Also, NO Honey is another issue for him.…
